COLOMBIA - SUGARCANE DECAF (8,25$/lb)
This Colombian coffee has been decaffeinated using the ethyl acetate process, also known as the “Sugarcane Process.”
Ethyl acetate is naturally obtained by fermenting sugarcane molasses to produce ethanol. By combining this ethanol with acetic acid (vinegar), we get ethyl acetate (E.A.).
To decaffeinate this coffee, the green beans first undergo a steam pre-treatment to remove the silver skin and open the pores.
Next, the beans are immersed in ethyl acetate to remove caffeine, then subjected to another steam phase to eliminate any ethyl acetate residue.
The final step involves drying the beans to restore the desired moisture level. Once this level is reached, the coffee is cooled and polished with a vegetable wax to protect and enhance its appearance. It is then ready for packaging and shipment.
